White wines contain little or no red pigmentation. They are almost always made from white grapes, but can
be produced from black grapes as well. In fact, winemakers can cultivate white wine from black grapes because
the juice in most black grapes is actually clear. White wines can be sweet or dry or somewhere between.
Enjoyable white wine has a fair amount of acidity counterbalanced with a bit of sweetness, subtle fruit flavors,
and perhaps a touch of oak. This is why white wines are best served chilled. Serving it at a warmer temperature
creates an unpleasantly sharp taste.

- Pinot Gris - Pinot Gris wines tend to be dry and crisp, the perfect accompaniment to salmon and seafood. Subtle in both flavor and aroma, reminiscent of almonds and peaches.
- Riesling - Floral and fruity, ideal for pork, foie gras, and other rich foods.
- Sauvignon / Fume Blanc - A versatile grape that grows well in a number of places, producing wines that are fruity and melon-tasting.
- Semillon - A truly underrated grape. Produces a brilliant gold wine with a soft, full, and, sometimes, even oily texture, often scented like figs. It can be made dry or sweet.
- Viognier - Easily rivals the most full-bodied Chardonnay. Possesses hints of anise, tangerine, and fig blended with spicy aromas.
